In western Massachusetts, we know spring is on the way when we see maple buckets perching on the trees. The maple harvest is the first one of the year. It generally starts in February and ends in April, depending on the weather. Soon after, bees start harvesting nectar and then making honey. This class is about maple, with notes on other sweet liquid treats — honey, agave, and golden syrup among them. We will have dishes centered around maple, honey and other syrups to taste and recipes to take home. Claire Hopley is an author of several books on culinary history.
