Gilded Age mansions in America or stately homes in England have seen kitchens featuring an enormous array of pans, pots, molds, and silver. Some of their uses are obvious; others are not. We’ll look at some of the dishes, menus, and serving traditions at Gilded Age mansions, among them Berkshire “cottages” such as Blantyre, Ventfort Hall, and similar homes elsewhere. Claire Hopley is author of several books on culinary history including The World of Blantyre, which is about a Gilded Age mansion, now a hotel, in Lenox. She will prepare 3-4 dishes for tasting and recipes to take home.
