The Pioneer Valley now has several mushroom growers producing Oyster, Lion’s Mane, Hen-of-the-Woods, and other mushrooms once only found in the wild. Now you can buy them in specialist groceries and farmers’ markets– even in some supermarkets. This class explains where they come from and how to make appetizers, main dishes, and even drinks with them, with samples to taste.
